Hand made stuffed manufactured by our master pasta makers with thin dough filled with Apulian burrata.
Burnt wheat flour has a very ancient history and is part of the tradition of the poor cuisine of Northern Puglia.
The flour is obtained by milling coarse grains escaped from the harvest and then cropped after the burning of the stubble.
